Portakallı Kremalı Tatlı / Orange and Cream Desert


Yahu bunun görüntüsü de muhteşem olduuuu :) Televizyonda sonuna yetiştim bir programda. İçinde tam ne vardı anlayamadım ama kafama göre uydurdum biraz, pek güzel oldu. Kişi sayısı kadar portakal. Ben 6 tane aldım. 6 tanesinin tek tek içlerini oyun. Ama tamamen değil birazı kalsın çeperlerinde ince bir tabaka olarak. Çıkan içlerin suyunu biraz süzün. Çok sulu olmayacak. Yani içinde yarım su bardağı kadar suyu olsun portakalın içi ile birlikte. Bunu robota atın. Üzerine 4-5 tane nane atın ,1 paket krema dökün. 2 çorba kaşığı şeker ve 3-4 çorba kaşığı sade dondurma ekleyin ve iyice çekin. Krema diğer malzemelerle birlikte özleşip kıvamı koyulaşıncaya kadar. Bunu sonra tekrar portakalların içine dondurun. Ve buzlukta doldurun. Servis yaparken üzerine nane yaprağı yerleştirilebilir. Mmmm çok güzel oldu. Şu portakal kış meyvesi ama yazın da inanılmaz taze tatlar yaratıyor :) Afiyet olsun.

I saw this in TV. I could not watch the whole receipe but I saw the end. So I improvised it a bit :). You need an orange per person. Carve out inside of oranges. But not carve totally; leave some meaty part a bit. Put what wou carved out in a blender. However it should not be soo juicy. For six oranges it should be around half a glass. Add 4-5 leaves of fresh mint, 1 small pack of fresh milk cream, 2 table spoons of sugar and 2-3 table spoons of vanilla ice cream. Blend well untill it thickens. And stuff the oranges with this. Finish with some mint leaves and freeze in the freezer for 2-3 hours before serving! It looks and tastes amazin :) Bon apetit.

Fırında prasalı kremalı somon/ Salmon in the owen with leeks and cream


Şöyle biraz kuzeye kaçsam hafif balık yesem derkeen bir de baktım vatandaşın birisi bir programda ben size İsveç usulu somon yapayım demez mi :) Resmen gözüm döndü :) Ve de muhteşem oldu. Tamam İsveç'te çeşit çeşit kremalı somonlar pişirilir de pırasalısını görmemiştim! Çok başarılı oldu.

Efendim öncelikle bir borcamı çok hafif sıvı yağ ile yağlıyoruz. Bir patatesi ince dilimleyip diziyoruz. Üzerine de verev doğradığımız pırasaları yerleştiriyoruz. Sonra da üzerine kişi sayısına göre somonları diziyoruz. Biraz tuz serpelim. Fırında 120 derece 25-30 dakika pişirelim. Bu arada bir kasede yarım paket kremayı yarım su bardağı süt ile seyretliyoruz.3 tatlı kaşığı soya sosu ve 1 çorba kaşığı kadar da tüm karabiber ekleyip karıştıralım. Dursun. Ve yanına çok güzel salata yapmaya geçelim. Bir kaseye Akdeniz yeşillikleri doğruyoruz. 4-5 tane roka doğrayıp ekliyoruz. 1 tane küçük kırmızıı soğanı ince doğrayıp ekliyoruz. 1 tane yeşil ekşi elma alıp 5-6 dilim ekliyoruz. (elma dilimi patates şeklinde). Sonra bir kaç dilim elmayı çok küçük küpler şeklinde bir küçük kaba doğruyoruz. Zevkinize göre zeytinyağı, 1 tatlı kaşığı hardal ve 1-2 tatlı kaşığı bal ekleyip iyice karıştırıyoruz. Bunu sonra salataya döküyoruz :) Muhteşem oldu! Tahminimden çok daha başaralı hafif kekremsi hafif tatlı ama taze bir karmaşa yarattı bu salata. Bu salata sosu aslında güzel bir yemek sosu da olabilir. Tavuklara sürüp fırına verebilirsiniz mesela. Sonra somon kabını çıkarıp krema karışımını gezdiriyoruz üzerinde. Dökünce pırasaların üzerine geçmeyecek. Bir yerde toplanan karabiberler varsa dağıtalım. 10 dakika kadar da böyle pişecek! Afiyet olsun! Yanına güzel beyaz şarap; sparkling cinsinden güzel olabilir :)

A very nice salmon receipe from beautiful Sweden. Very easy to make!
Put some olive oil in a cookin pan. Slice potatos in. And slice leeks over it. Place salmons (according to number of people). Sprinkle salt and put in the owen at 120C for 25-30 minutes. In a bowl whisp half a small pack of fresh cream and half a glass of milk. Add 3 desert spoons of soya sauce and a table spoon of black pepper seeds. After 25-30 minutes add these in the pot and cook for 10 minutes more. Bon Apetit! You can make green mediterranean salad with green apples and mustard-honey sauce to complement this! And some nice white wine! Bon apetite!

Bosphorus Chicken


Now we have a guest recipe starring in JCF :)

Many thanks go to Anders and Zeynep for introducing this creamy yummy dish :) Unfortunately it did not have a name at first. We don’t know where it originates exactly but most probably it started as a potato dish somewhere in Balkans. And then with some improvements by Anders and Zeynep it came into this form. After a small chat over the dinner table, we decided to call it “Bosphorus Chicken” :) As it exactly symbolizes meeting point of different influences/cultures as the dish itself  Here you have the recipe (for four people)

Ingredients:
Around 10 small or 4-5 big potatoes.
1 pack of broccoli (as it is sold in packs here; but I guess two bunches are enough otherwise)
1 chicken bulyon (I have no idea about the English translation for this and could not find in dictionary but it is this chicken flavor bars in small packs)
Around 200 grs of chicken (1 breast would be enough)
1 table spoon of mustard (if you prefer, you might not add it if you don't like mustard
2 gloves of garlic
1 small pack of milk cream and some milk
Salt and black pepper powder

Peel the potatoes and slice them. Leave in water for a while; around 20 minutes I guess. (This is important for releasing starch so that potatoes become crispy when you cook them)
And then cook them in oven over a metal tray. This is important; don’t use glass tray or pot since it doesn’t get too hot and potatoes won’t soak cream later). You need to cook in high temperature (230-250 C) until they turn crispy around 25 minutes. In the half way turn them upside down.

Meanwhile, cut broccoli in pieces and cook shortly in boiling water (5 minutes) and take out of water. Chop chicken in cubes and chop garlic in slices. Start frying the garlic in medium heat with some olive oil until they turn colour (around 3 table spoons). Watch out and don’t burn them or get them brown. Add chicken and fry them more. It doesn’t have to be cooked much since they will be cooked a bit more with cream and then get into oven later. Cook till it turn colour basically. Then mix cream with some milk. I don’t have the exact amount to tell you but if the cream is too fat and thick (as it is the case here in Turkey) it should be 2 portions of milk and 1 portion of cream. If the cream is not that thick you might put less milk or even none at all. It depends on cream. Add this mixture in the chicken and add bulyon bar, add some salt and black pepper powder, mustard if you like and cook for 10 minutes. Then take the potatoes out of oven and mix it well with broccoli and creamy chicken. Put back in the oven and cook for 10 minutes more...
